Sydney waited five years for this world-famous croissanterie to open. What’s a few more minutes in line? Any queueing you do will be rewarded with warm, buttery croissants, caramelised kouign-amanns and tangy lemon curd-filled cruffins. Former Formula One aerodynamicist Kate Reid has engineered each pastry with precision, resulting in crisp, golden layers and a light, airy centre.

The flagship Sydney store, inside Rosebery Engine Yards, is a fitting choice for the brand’s trademark industrial styling. Seating is limited, but there’s a sculptural standing bar with views of the baker’s kitchen, encased in glass.
